 Review Similar to previous editions, the fifth edition of this book is  organized into the following chapters: Introduction, Structure and Composition, Physiology and Biochemistry, Effects of Temperature, Water Loss and Humidity, Storage Atmosphere, Technology of Storage, Physiological Disorders, Pathology, Evaluation and Management of Quality, Preparation for Market, Packaging, and Commodity Storage Recommendations. The authors have updated the information in all chapters and added information about postharvest handling of organic produce. This book is not only an excellent textbook for an introductory course in Postharvest Horticulture, but also a very useful handbook for postharvest technologists and produce handlers.
