Research Topics: Coatings for whole and fresh-cut fruits and vegetables as well as nuts; flavor of whole and fresh-cut fruits and vegetables including sugars, acids, flavor volatiles, and sensory; pre-treatment of whole fruit for effect on fresh-cut shelf life and quality.

Commodities : Apple, tomato, citrus, mango, lychee, papaya, peach, blackberry, and pecans.

Instrumentation : Refractometer, several GC’s for both CO 2/O 2/ethylene and flavor volatiles, mass spec, electronic nose, HPLC (currently set up to run sugars), automatic titrator, Min olta chromameter, the worlds oldest Instron.Some experience in sensory.
