Research topics : Flavonoids and antioxidant activities in major fruits. Enzymatic browning and its prevention. Minimal processing of fruits and vegetables. Natural antibrowning agents.

Instrumentation : HPLC with diode array and fluorescence detectors, uv/vis Spectrophotometer with diode array detector, column chromatigraphy, gel electrophoresis, microscope, etc.
