Commodities : apple, melons, strawberries and tropical fruits

Research topics: We are currently working mostly on fresh apples and apple cider, but Lester and Cheryll have worked or are planning to work with other fresh fruits such as strawberries, melons, and tropical fruits. We are looking at the effectiveness of sanitizers in removing viable E. coli from the surfaces of apples. We are also looking at electron beam irradiation of apple cider as a means to kill contaminants. We have been using a nontoxigenic strain of E. coli O157:H7 (strain B6-914 gfp 90ec) as a model. In addition to the effects on microbial contaminants, we also look at effects of processing on quality of the fruit and cider.
