Title : Postharvest Physiologist

Research Topics : Effects of pathogen reduction and quality assessment methods on ripening and senescing fruit and vegetables (varietal and harvest maturity differences, color, texture, carbohydrate metabolism, and nutritional quality). Particular emphasis is placed on the effects of (-irradiation (CO 60), acidified sodium chlorite (ASC), hot water, and calcium treatments on firmness, textural changes and its effects on enzymatic changes, i.e., polygalacturonase, pectin methylesterase, $-galactosidase, cellulase, peroxidase and ascorbate metabolism and antioxidants. Also interested in physiological ripening disorders which affect fruit quality, i.e., oxidative stress (ascorbic acid metabolism; antioxidants, and lipid peroxidation products).

Commodities : Tomatoes, strawberries, cantaloupes, cucumbers, peaches, bell pepper, lettuce, squash.

Instrumentation : Bio-RAd 8221T Gradient HPLC with RI and UV/VIS monitor, BIO-RAD Econo Low Pressure Chromatography system, Beckman DU 650 UV/VIS Scanning Spectrophotometer equipped with enzyme mechanism software, protein assay, and nucleic acid analysis software, Minolta Spectrophotometer model CM2002 equipped with SpectrMagic software, Varian Model 3400 GC, automatic titrimeter system Model TR85, several horizontal mini agarose gel units, Stragene UV Stratalinker and Possiblot pressure blotter, and Instron Universal pressure instrument.
