This 1-day workshop includes lectures on the principles and applications of measuring produce color, flavor, and texture, and includes demonstrations of a variety of the latest equipment. The principles behind instrumental measurement of flavor, color and texture will be discussed, and the various instruments and methods available will be available in interactive demonstrations. Real-life examples of fresh and processed fruit and vegetable color and texture measurement will be demonstrated. Examples of applications where flavor, color and texture were measured on a wide variety of vegetables and fruits will be given by workshop instructors.

Who Should Attend

This course is designed for those working in the fresh produce and processed fruit and vegetable industries. The principles and applications of color, texture and flavor measurement will be particularly relevant to fresh fruit and vegetable growers, packinghouse operators and retail and foodservice personnel as well as individuals involved in quality control and research and development activities.

Enrollment Fee

The attendee registration fee of $395 includes instruction, course materials, lunch and morning and afternoon snack and coffee breaks. Refer to registration section below for attendee registration options.

The exhibitor registration fee of $450 includes one workshop registration, table top with drape, wi-fi access, chairs, and outlet.

Please note that exhibitors wishing to participate must complete the Exhibitor Application survey and receive authorization from the Course Coordinator prior to registering. Following authorization to register, we will send you an email link directly to register as an exhibitor.

If Your Plans Change

Refunds, less a $25 processing fee, will be granted if requested at least seven calendar days before the course begins. At that time, you may also discuss sending a substitute.

Accommodations & Parking

For hotel information please go to the Yolo County Visitor's Bureau and look under “Davis” for “Hotels & Inns.” A valid UCD permit is required to park on campus. Daily Visitor Permits (VP) are available for $9.00 and may be purchased from permit dispensing machines located at the entrance to visitor parking lots.

Dr. Barrett's research program addresses the effects of raw material quality and processing on color, flavor, texture and nutritional quality of fruit and vegetable products, with particular emphasis on enzyme-catalyzed reactions which result in qualitative losses. Specific enzymes studied include polyphenol oxidase, lipoxygenase, pectin methylesterase, polygalacturonase, peroxidase and hydroperoxide lyase. Handling and processing technologies of interest include fresh-cut processing, canning, freezing, irradiation, high pressure and aseptic processing. She also directs the Center for Advanced Processing & Packaging.
