Your information is well appreciated. When a honeydew looks ok but is not sweet what does this mean?

Our Reply:

Mar 18, 2009
From: M.E. Reed

Thank you for your question. All melons develop their sweetness and flavor as they ripen on the vine. Once the melon is separated from the vine, the sugar development process stops. It can be very difficult to determine if a honeydew melon has fully developed its sweetness based the outside appearance of the melon.

Here are some resources that may be of assistance to you: 1) Consider purchasing a copy of our Compatible Produce for 7-Day Storage poster and temperature guide charts; 2) Consider purchasing a copy of our Transportation Series (each title includes tables of compatible produce), and 3) Link to our Properties and Recommended Conditions for the Storage of Fresh Fruits and Vegetables. Hopefully one or more of these resources will be useful to provide you with current and accurate information.

Dear Sir, thank you for the article on table celery. I was looking for pictures depicting the growing stalk up the middle. I have grown celery for 13 years in a gravel culture hydroponic unit here in South Africa. My customer does not understand that table celery is suppossed to be a pale green and if the piteole is slightly yellow as it emergs from the root bowl, it is a sign of excellent growth and health qualities. I would appreciate it if you could confirm my understanding.

I have forwarded your question to Drs. Trevor Suslow and Marita Cantwell who authored the Produce Facts: Recommendations for Maintaining Postharvest Quality of Celery. They will respond to you directly.

Dear Sir i have a question with regards to Blast cooling vegetables ie. baby corn. We put the product in a large cold room running at + 2 degrees.when we are about to dispatch the product we put the product infront of a blast cooling fan which is supposed to take out the remaining heat from the product. I do not think this is usefull since we are usin g the same refrigeration system. Is this a good way of blast cooling produce before dispatch.
