This is the first book that shows by series of color photographs how the visual quality of 35 fruits and vegetables changes throughout their postharvest life and how temperatures between 0 and 25 C (32 and 77 F) greatly contribute to critical quality changes that determine limits of the postharvest-life and marketability of each commodity. Close-up photographs of specific disorders, such as chilling injury, are also included. The commodities covered are: apple, asparagus, bean (faba), bean (snap), blackberry, blueberry, broccoli, Brussles sprouts, cabbage, cantaloupe, cape gooseberry, carambola, cauliflower, currant, eggplant, garlic (fresh), grapefruit, green onion, leek, lettuce, mandarin, mango, mushroom, orange, papaya, passion fruit, peach, pepper (green bell), raspberry, squash (yellow), strawberry, sweet corn, tomato, watermelon, and Witloof chicory. The book also includes very useful information based on literature review and the author’s research (for more than 10 years) about quality characteristics, optimum postharvest handling conditions, and temperature effects on quality of each of the 35 commodities. Overall, this book is an excellent addition to produce quality information resources and I recommend it to all those interested in postharvest quality maintenance of fruits and vegetables. |
